Avocado & Grapefruit Salad with Emmental

This unique, quick and easy recipe doesn’t sacrifice any of its flavor for simplicity. It’s ingredients, (zesty grapefruit, creamy emmental and mild avocado), give it a rich flavor, perfect for a light meal for two or a starter for more. Courtesy of our Expat Marketing Manager Laure Perriot.


1 grapefruit

2 avocados

300g cherry tomatoes

1 can of corn

80g emmental cheese

Olive oil


Lemon juice


Balsamic vinegar


1. Peal grapefruit and avocado, cut into small pieces, (add some lemon juice to ensure that the avocado does not brown), and mix together

2. Wash cherry tomatoes and cut in to wedges, adding to the grapefruit and avocado

3. Drain corn of all water and add it to the mixture

4. Dice the emmental in to small cubes and add to the mixture

5. To create the dressing, mix together olive oil, mustard, lemon juice, balsamic vinegar and salt to taste

6. Add dressing to mixture and mix together well, taking care to do so gently so as not to bruise or soften fruit

7. Serve!
